The clear tiles would be a nice idea, but you would have to grout between them which might throw off the look you're going for since there is no "clear" grout.

I have seen people apply a water-based polyurethane coat over wallpaper before, to give it the water resistance you need for a backsplash. The only thing I would caution though is that it will be very difficult to remove later on if you did.
